The project seeks to uncover high-potential origins, where altitude, soil, and producer expertise come together to create coffees with exceptional floral expression, clarity, and structure.\u003c\/p\u003e\n\u003cp data-start=\"537\" data-end=\"939\" data-is-last-node=\"\" data-is-only-node=\"\"\u003eThe coffee is produced by Palestina Crop Management, based in the Huila region. Only cherries at peak ripeness are harvested, followed by a 48-hour whole cherry fermentation. After depulping, the coffee undergoes a further 24 hours of carefully controlled fermentation.
