Yessica Parra, a fourth generation producer and former specialty coffee instructor, manages this lot at her farm along with Diego, El Mirador, in Pitalito.\u003c\/p\u003e\n\u003cp\u003eInitially started as a side project in 2021 while both worked for other coffee companies, Diwan Coffee has since become their full-time business and roasted coffee brand. Their goal is for Diwan Coffee to serve as an educational hub for other young producers in Huila to ensure the long-term sustainability of specialty coffee in their region.\u003c\/p\u003e\n\u003cp\u003eSimilar to their Gesha, the Sidra undergoes a meticulous 48-hour cherry rest followed by an underwater secondary fermentation.
