Every year, we have looked forward to his coffee, and have been happy to roast each new Pink Bourbon harvest, and taste his other varieties as they’ve become available. This harvest, however, marks our biggest season of Alirio’s coffee to date, with seven exceptional single-variety microlots hitting our menu, five of which are exclusive to Subtext. Alirio, his wife Anayibe, and their children oversee three different farms in Bruselas, Huila: El Roble, El Diviso, and El Meson. They grow Pink Bourbon, Red Bourbon, Sidra, Caturron, Chiroso, Aji, Pacamara, and more. They fertilize their farms with homemade organic compost as they strive for a more sustainable, and biodynamic form of agriculture. In addition to coffee they grow plantain, beans, and corn, which they sell on the local market. We hope you’re just as excited to taste Alirio’s harvest as we are to share it with you.
