We had gone back and forth over the next coffee to bring in, not arguing exactly, but circling the question in that gentle, nerdy way only coffee people do. El Paraiso Zeo from September kept coming up—especially because it was Chiroso, a varietal I was keen to have on the table and a roaster both of us appreciate and the Zeolite Natural process sounded too intriguing to ignore. 

These weren’t just Colombian cherries; they were carefully selected at peak ripeness, disinfected with ozone, frozen down to -40°C, and then dried under negative pressure with zeolites guiding the sublimation. Instead of the old reputation of Colombia as a source of anonymous, “cheap” beans, this coffee embodied how producers there have pushed the boundaries—using science and precision to transform simple fruit into something layered and expressive. In the cup, that work showed up as citrus, berries, and a refreshing, juicy texture, but looking back, both of us could use this as a shared reminder that thoughtful disagreements can lead to genuinely exciting coffee.
