Founded by Kyle Rowsell in Ottawa, this roastery prioritizes technical clarity and terroir. Using a Loring S15 Falcon, they highlight vibrant acidity and natural sweetness through precision roasting. Their dual-series philosophy—the sparkling, ultra-light "Shower Series" and the textured, balanced "Storm Series"—ensures a transparent cup for every palate. This commitment to education and craftsmanship offers a sophisticated experience that balances modern roasting science with the genuine soul of high-end coffee.

Hydrangea coffee is a project about light, fruit-forward, process-focused coffee and the weird and wonderful world of those who love drinking it.
Big Sur
Big Sur Coffee is a specialty coffee roastery based in Shanghai, China Since 2016. Our roasting principle is to express the inherent characteristics of the coffee varieties and the flavor of the terroir through optimal roasting by Loring S35 for espresso beans and Loring S7 for filters.
We emphasize the quality of green beans. Green beans are to coffee what ingredients are to food. High quality green beans are the foundation of a good cup of coffee. Therefore, we go deep into origins, have a direct dialogue with producers and estate owners, and purchase high-quality green beans that can best represent the terroir through direct trade.
