Processing Notes: the cherries are selectively harvested and then fermented at the farm's highest point, where temperatures average around 22°C. Fermentation takes 72 hours in sealed containers without water. After fermentation, the cherries are dried under shade with steady airflow to prevent mould caused by humidity. After around 24 days, they reach an average moisture content of 11% and are stored in GrainPro bags.
