About Beans:

Peru’s longest-cultivated coffee variety has always been Bourbon. Before planting Geisha, Finca Miraflores reserved its very best plots for Bourbon—so much so that Lot 6, where this Bourbon is grown, sits at an even higher elevation than their Geisha lots. The cherries are a deep purplish red Red Bourbon; bite into one fresh and you’ll immediately taste its sweetness.

This season, in addition to our Geisha, we’re excited to present this honey-processed Red Bourbon. We hope you’ll experience it from the perspective of pure sweetness—an expression of how the Bourbon variety performs in the unique terroir of Finca Miraflores.

Though it is not the delicate Geisha variety, the farm still applies a meticulous and labor-intensive spring-water cold fermentation. The red-purple cherries are first sealed in GrainPro bags and submerged in cold water for 12 hours of fermentation. They are then transferred to a larger tank for flotation sorting. After flotation, the cherries rest for another 12 hours before depulping, and are finally moved to raised beds to dry for 30–45 days.
