This is Bambito Estate’s further exploration of their signature variety, Yellow Catuai. Through 72 hours of controlled anaerobic cold fermentation at 18°C, they have unlocked even more expressive flavors and a remarkably creamy, silky mouthfeel.
After fermentation, the coffee cherries first undergo pre-drying on raised African beds, followed by approximately three weeks of slow drying in a temperature-controlled dark room. This extended drying process enhances the integration of flavor and body while significantly improving the delicacy and smoothness of the texture.
In the cup, it first impresses with a silky and refined mouthfeel. Vibrant passion fruit aroma lingers, followed by a delightful sweet-tart balance of hawthorn and mango.
