Notes on processing: The cherries are pulped before being adding in a fermentation must (mossto). This must is made from the juices and pulp of geisha coffee that had undergone a carefully controlled fermentation for 48 hours. As a result the flavour precursors and other microbial metabolites from the geisha are introduced to the pink bourbon to create a unique harmonized profile.
