Ripe cherries selectively picked and delivered to the mill inside of 24 hours. Cherries placed on stacked raised drying beds in a marsequina, beginning on upper levels with greater sun exposure before being moved progressively to lower levels as moisture content decreased, extending overall drying time. Coffee was turned and hand sorted frequently throughout. Dry milled at Corazón de Jesús
