Only ripe red cherries are selected and, after picking, soaked in water to remove dust and floaters (immature or malformed beans), lowering the microbial count and homogenising cherry temperature. Cherries are then placed on raised beds to dry; in this cooler, cloudier season drying was managed over 25 to 30 days, with cherries laid out at 10 AM and collected each afternoon at 2 PM to concentrate drying in the warmest part of the day, and turned frequently throughout for even moisture loss. Dried pods are then milled at the dry mill in Fraijanes, sorted, and prepared for export.
