Ripe cherries are placed in a plastic barrel and fermented in an anoxic environment for 72 hours. After this, the cherries are de-pulped and the parchment is dry fermented in an open-tank overnight. The following morning, the parchment is washed clean of mucilage with 4 individual changes of water. Dried in a marquesina over 18 days, with continual hand sorting.
