Process: Double Washed: In-cherry fermentation for 24-30 hours, depulped and washed with some mucilage remaining, fermented underwater for another 36-40 hours. Washed thoroughly and then dried on raised beds for 18-22 days.  
Tasting notes: Canteloupe, sugarcane, marigold
